This is a batch pre-mixed that's packed with the essence of the Christmas time, making it perfect for hosting a festive gathering. Save the extra cordial to use in morning drinks, puddings, or for another batch of the drink.
The Bikini Cocktail
Yields 10 servings
For the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Method
Making the Cordial: Put every items into a pan, heat until it reaches a gentle boil, mixing so the sugar melts. After that, turn off the heat and let it to cool down completely. Pour into an clean bottle, close it and store chilled, it can be stored for around one month.
To make Premix: Pour all the liquid ingredients into one large bottle, allow it to infuse for an hour, then pass it through best through a fine cloth, so it's perfectly clear.
To serve: Measure 85ml of the cocktail base to a cocktail shaker packed with ice, and agitate carefully for one minute until cold. Filter into a frosted cocktail glass or equivalent, top with some cranberries adding the final touch with a light spray of mandarin oil over the drink.
